- oil for deep frying
- 1 lb. firm puffballs, skin removed if tough
- salt
Methods/steps
- Heat oil to 375F.
- Slice puffballs as thin as possible, or on a mandolin.
- Drop a small amount of slices at time into oil.
- Fry 2-3 minutes or until golden browned and curling.
- Remove with slotted spoon and drain on paper towels.
- Add salt to taste.
- Serve while warm.
Additional Tips
Also works well with sliced Agaricus or oyster mushrooms.
